Transform your culinary ambition into a structured professional development path with a comprehensive online program built for aspiring cooks, working foodservice professionals, and culinary apprentices. This program and the included RTI courseware are designed to prepare learners for successful completion of the Certified Culinarian (CC) certification through the American Culinary Federation (ACF), while bringing professional cooking, kitchen operations, hospitality management, and food safety together in one coordinated 485-hour learning experience. This food safety training is offered in a flexible online format designed to help you build confidence across the skills used in commercial kitchens.
While progressing through a clearly organized sequence of lessons, assessments, and applied activities, the curriculum moves from foundational kitchen practices to broader operational responsibility. You will develop knife skills, mise en place, sanitation, recipe measurement and conversion, and dry-, moist-, and combination-heat cooking techniques.
You will also learn to prepare vegetables, stocks, soups, sauces, eggs, grains, pasta, meat, poultry, fish, breads, pastries, chocolate, and plant-based dishes. Throughout this food safety certification program, you will strengthen your nutrition, allergy awareness, plating, purchasing, receiving, inventory, dining room service, beverage service, supervision, communication, and guest service skills. Practical cooking submissions and graded activities reinforce the connection between culinary knowledge and workplace application.
This food management certification bundle is designed around complementary credentials and certification pathways. Completion of Rouxbe's Professional Cook Certification course results in a Rouxbe certificate and is recognized for 215 ACF continuing education hours (CEHs).
The program also includes 240 hours of ACF Culinarian courseware that supports the education and related instruction components of the ACF Certified Culinarian (CC) pathway, along with World Food Safety Organization (WFSO) food safety training and preparation for the Food Protection Manager certification exam, including an exam voucher. The ACF CC application, written exam, and practical exam are not included and must be completed separately through ACF.
