This pastry arts course delivers a thorough, 60-hour online immersion into the technical, artistic, and scientific principles of professional baking and pastry production. The program provides American Culinary Federation Education Foundation (ACFEF)-approved continuing education hours (CEHs) and is designed for aspiring bakers, culinary students, and industry professionals looking to diversify their skill sets.

Your training will begin by mastering kitchen workflow environments, step-by-step sanitation, volumetric scaling accuracy, and ingredient functionality—including the physical roles of structural flours, fats, and water-fat stabilizers. As your technical proficiency develops, this baking course moves into core practical methodologies such as the creaming method for cookies, the well method for quick breads, base temperature calculations for artisan loaf breads, and handling yeasted, enriched, and laminated doughs.

This dynamic cake decoration training covers a vast classical repertoire, featuring French baguettes, Italian focaccia, breakfast brioches, croissants, choux pastes, custards, and macarons. Through more than 100 high-definition instructional videos and rigorous practical baking evaluations, you will build an impressive culinary portfolio, culminating in a milestone Brunch Celebration Buffet Capstone project that proves real-world operational readiness.
